PURPOSE

Before Netra Café, Netra Raval spent four years training under barista champions in Melbourne and studying food science at Pune University. She returned to Ahmedabad in 2008 with one conviction: the city deserved world-class coffee served without pretension.
Today she still roasts every morning, trains every barista personally, and insists on tasting every new menu item before it reaches a single guest. That commitment hasn't changed in 15 years.
Roastery

Former SCA champion. Roasts 40 kg of single-origin beans every morning before 7 am. Visits farms in Coorg and Chikmagalur every harvest season — knows every farmer by name.
Pastry

Le Cordon Bleu trained. Behind the banana bread people fight over, the 72-layer croissants, and every seasonal bake on the menu. Her blueberry muffins have their own fan club.
Kitchen

Trained in Naples, brought the wood-fire technique that defines our kitchen. Crafts every pizza, pasta, and seasonal special. Fiercely protective of the dough recipe — and rightly so.

I trained at Le Cordon Bleu, but Netra taught me something they couldn't — the joy of watching someone close their eyes after the first bite. That moment is why I bake.
By my third week here, I already knew 40 regulars' orders by heart. People don't just come for the coffee — they come because this place remembers them. That means everything.
During 2020 I didn't take a single day off. Not because I had to — because I couldn't imagine letting the team or the city down. Netra Café earns that kind of loyalty.
I invented the Salted Caramel Frappe on a Tuesday evening after closing. Netra tasted it, smiled, and put it on the menu the next morning. That's what working here feels like.
Wood-fire cooking is unforgiving — the flame decides. But it also rewards honesty. Every pizza we send out of that kitchen is a small act of craft. I never get tired of it.
